I found this absolutely delicious recipe for Banana Bread and decided to add walnuts to it. They add a great texture to this fluffy snack.
2 cups flour (I use unbleached wheat flour)
1 tsp baking powder
3/4 cup turbinado sugar (Sugar in the Raw)
2 tbsp oil (I use safflower oil)
1/2 cup (or more) chopped walnuts (optional)
Dash of salt
Preheat oven to 350. In large bowl, mash 3 bananas with a fork until mostly soft. Add oil, baking powder, sugar and dash of salt to mixture and stir. Add flour and walnuts. I usually just eyeball the walnuts. Put in as many or as few as you want. I love nuts. Stir thoroughly and dump batter into greased loaf pan. If you like nuts, sprinkle some on top and gently press them down with fork. Bake for 40 minutes or until lightly golden and a clean toothpick can be extracted from it. Serves 10.
