Homemade Vegan Macaroni and Cheese

I discovered this recipe out of VegNews magazine, where they took it from VegWeb.com.  It has a nice creamy flavor that may not taste JUST like cheese, but stands up on its own.

1 cup water

3/4 cup nutritional yeast

1/4 cup pine nuts

2 tsp onion powder

1 tsp garlic powder

1/2 tsp salt

1 tsp pepper

1 tbsp parsley

1 tbsp soy sauce (or Bragg Liquid Aminos)

1 cup uncooked macaroni

3 tbsp olive oil

1/4 cup flour

3/4 cup breadcrumbs

Preheat oven to 400.  In a medium pot, fill 3/4 of the way with water and boil.  While water is boiling put nutritional yeast, pine nuts, onion powder, garlic powder, salt, pepper, parsley, soy sauce, and 1 cup water into blender and blend until smooth.

Cook pasta according to package.  In a large pan, heat olive oil on medium heat.  Throw in flour and constantly stir so there are no clumps.  Pour blended mixture into pan while stirring and cook till it reaches consistency desired.  Drain pasta and add to mixture.  Place in baking dish and put bread crumbs on top.  Bake for 10 minutes.  Enjoy!  Makes 4 servings.
